Not your traditional potato latke recipe (Accidentally Vegan and Gluten-Free)

Serves: 6 latkes
- 2 large yellow potatoes, peeled and grated
- 1 medium onion, peeled and grated
- 1 and ½ apples (golden delicious or granny smith for a less sweet result), peeled and grated
- 2-3" vegan mozzarella cheese, grated
- ⅛ tsp salt
- 1 tbsp flour (potato flour, or all purpose flour)
- ⅓ cup canola oil for frying
- Combine the grated potato, onion and apple and drain off as much moisture as possible.
- Add the grated cheese, salt and flour, and combine well.
- Heat the oil in a frying pan and then reduce to medium-high heat.
- Form patties from the potato mixture, again squeezing off any remaining liquid (to avoid the oil spitting).
- Fry until nicely browned and crispy on both sides.
- Remove to sit on a paper towel to drain off excess oil.
- Serve warm with applesauce
