Not your traditional potato latke recipe (Accidentally Vegan and Gluten-Free)

Serves: 6 latkes
  • 2 large yellow potatoes, peeled and grated
  • 1 medium onion, peeled and grated
  • 1 and ½ apples (golden delicious or granny smith for a less sweet result), peeled and grated
  • 2-3" vegan mozzarella cheese, grated
  • ⅛ tsp salt
  • 1 tbsp flour (potato flour, or all purpose flour)
  • ⅓ cup canola oil for frying
  1. Combine the grated potato, onion and apple and drain off as much moisture as possible.
  2. Add the grated cheese, salt and flour, and combine well.
  3. Heat the oil in a frying pan and then reduce to medium-high heat.
  4. Form patties from the potato mixture, again squeezing off any remaining liquid (to avoid the oil spitting).
  5. Fry until nicely browned and crispy on both sides.
  6. Remove to sit on a paper towel to drain off excess oil.
  7. Serve warm with applesauce
