NUT-FREE Chickpea Blondies

These amazing vegan blondies are also gluten-free and nut-free, making them a go-to dessert for multiple-allergy families.
Ingredients
  • 1 cup cooked chickpeas (1 can, rinsed and drained)
  • ¼ cup oat flour
  • ¼ cup rice flour
  • ¼ cup coconut oil (warmed to liquid form)
  • ⅓ cup maple syrup
  • 2 medjool dates, pitted and soaked
  • ½ tsp baking soda
  • ¼ tsp salt (optional)
  • 1 tsp vanilla extract
  • ⅓ cup + 2 Tbsp chocolate chips
Instructions
  1. Preheat the oven to 350 F and line a baking sheet with parchment paper.
  2. Pulse all ingredients (except the chocolate chips) to a smooth puree using a blender or food processor.
  3. Spoon the batter to your baking sheet and mix in the ⅓ cup of chocolate chips.
  4. Spread evenly on your baking sheet in a rectangular shape, aiming for a thickness of ½ cm.
  5. Sprinkle the remaining chocolate chips over the top.
  6. Bake in the oven for 18-24 minutes, until the top is nicely browned and a toothpick inserted comes out clean.
  7. Let cool before cutting into squares.
  8. Store in the fridge (if there are any left)
