Vegan Baking – A Guide on How to Substitute Eggs

Whether you are going vegan or catering to an egg allergy, it can be disappointing to find that a recipe you want to make has egg as one of the ingredients.

But it doesn’t need to be – there are actually several substitutes you can use for simple egg-free baking.

Popular substitutes for egg are banana, flax egg, chia egg, apple sauce, avocado, agar agar, or if you’re simply turning to the staples in your pantry then even baking powder mixed with oil. With so many options to substitute egg with, vegan baking is actually quite simple and will become second nature.

Here’s a helpful table showing the different ways you can substitute for eggs that you can save for quick reference.

Vegan Egg Substitutes

With any substitution, the key to success is really reading the batter – once you’ve made your substitution and have mixed your ingredients together, decide for yourself – is the batter too wet (in which case you may want to add more flour, one tbsp at a time), or too dry (which can be fixed by adding a tbsp more of your egg substitute or a spoon or two of milk)?

Trust your judgement and you’ll find that you quickly figure out what substitutes work best with your recipes. Your friends will have no idea.

    I tried the baking powder with oil mix and the pancakes tastes great but they crumbled and fell apart with any touch. Any advice to prevent that?

      Hi Megan,

      Sorry to hear it didn’t work out the way you had hoped. There could be a few reasons for the crumbly texture of the pancakes. Can you share the recipe you used and I will see if I can notice why it may have turned out like that.
